4th of July 2008

It's time for our annual 4th of July celebration again! It's amazing how much more I accomplish when I don't have the week off--it's been hard to get motivated this week even though I am very much looking forward to Friday.

So, with 2 days to go, all we've done is the big Costco shopping trip. Today I'm going to get caught up by finishing the menu, finishing the last of the grocery shopping, and taking care of all thing marinade. Thus far, the menu is as follows:

Tequila and lime marinated tri-tip roast
Black & bleu burgers on ciabatta bread
Grilled chicken (lemon herb and jerk)
Grilled salmon with fresh lemon and herbs
Veggie kabobs
Stuffed mushrooms
Grilled corn on the cob
Potato salad
Chopped salad
Berry shortcakes
Lemon swirl cheesecake

We'll also have the usual veggie tray and some watermelon, but I still feel like we're missing something...hmmmmm. It might be helpful to know how many people are coming (you can never tell with our friends and family!).

The drinks on the menu include Pisco sours (in honor of our recent trip to Peru), strawberry margaritas, an assortment of Gordon Biersch beer and fresh squeezed lemonade (my it's nice to have lemon trees in the yard!).
